Because May means it’s been just about a year since I graduated college, and that seems totally unreal. Growing up, I remember everyone older than me always saying to enjoy where you’re at in life – embrace being young and being in school and stop trying to grow up so quickly. 

The older I get, the more I understand why they said that. Not only is childhood a time to be greatly appreciated, but time seems to be speeding up as I age. Days and weeks can fly by in a haze of busy-ness with little notice. Suddenly, it’s been a year since I graduated and took on Bakerita full time.

These sweet dessert bites are Paleo, gluten-free, and vegan.The other day, my dad posted a photo on Facebook of him, my sister and I when I was a baby, commenting that it felt like it was yesterday. I realized that for however I feel about time flying by, my parents feel that 10x over.

One of my good blogging friends, Isadora of She Likes Food, is about to become a momma herself to a little baby boy and my friends Sarah, Ashley, and Marcie organized a virtual baby shower to celebrate and shower her with love and delicious treats! Izzy, your little boy is going to be one lucky kid with such a wonderful momma. I know you’ll smother him with love, and remember to enjoy each and every moment -it’ll fly by! :)

You can bet that I wish this was a real shower so I could nosh on everyone’s goodies.

Izzy follows a gluten-free and vegetarian diet, so I wanted to make sure my contribution to the shower was something she could definitely enjoy. These mini berry tarts are just that! They’re cute, simple, and absolutely delicious.

These sweet dessert bites are Paleo, gluten-free, and vegan.These little tarts have a simple coconut flour shortbread crust. It’s sweetened with maple syrup and uses coconut oil. These dough is pressed into a mini muffin pan to make the mini cups, which are then baked and filled with coconut whipped cream. It’s all topped off with fresh berries for a perfect fresh sweet treat.

These little bites take advantage of the fresh berries coming back into season, and they pair perfectly with the smooth coconut cream and crunchy, crumbly crust. These are perfect for a baby or bridal shower, a barbecue, or any other time you need something to satisfy that sweet tooth ;)

Ingredients
For the crust
  • 1 cup (112 grams) coconut flour
  • ½ cup coconut oil, solid
  • ¼ cup maple syrup
  • ¼ teaspoon kosher salt
For the filling
  • 1 cup coconut cream, chilled (see notes)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh mixed berries
Directions
  1. Preheat the oven to 350ºF. Lightly grease a 24-cavity mini muffin pan with coconut oil.
  2. Combine coconut flour and salt in a bowl. Add the maple syrup and room temperature coconut oil and mix until a large dough ball forms, pressing out any clumps of coconut oil. If you're mixing with a bowl and spoon (not a stand mixer), you may want to use your hands at the end to bring to dough fully together and make sure there aren't any lumps.
  3. Divide the dough between the 24 mini muffin cavities and press up the sides. Bake for 9-11 minutes, or until golden brown around the edges. Let cool completely before using a toothpick or knife to pop the cups out of the muffin tin.
  4. In a stand mixer fitted with a whisk attachment (or a hand mixer), beat the chilled coconut cream with the maple syrup and vanilla extract until smooth and creamy, 1-2 minutes.
  5. Add a scoop of whipped coconut cream to each cooled shortbread cup and top with fresh berries. Serve immediately.
Notes
Coconut cream can be bought on it's own here or at Trader Joe's. If you can't find it that way, you can purchase regular full-fat coconut milk and place it in the fridge overnight - when you open the can, scrape off the thickened top layer and measure that. You should get about 1 cup from a 14.5 oz. can.

  1. It’s so true that time flies. It seems like yesterday that we were living in Africa. . .but it’s been 2 years since our move to Boston. Perhaps this is testament that we need to make a more concerted effort to slow down and take in every minute. . but alas the world doesn’t work that way.

  5. You sound just like my son Sean Rachel! He graduated from college last May too! He has a full time job where he works long hours and when he gets home from work he’s tired.     • Can you tell me what this is? Is this the top of an unshaken can of coconut milk? The recipe assumes we know this but I am new to this way of cooking. How many cans does it take to get a cup of this stuff? Thank you for your reply, I couldn’t figure out a way to ask the owner of this site a question.

      • Hi Jane. I added a helpful explanation into the “Notes” section of the recipe after seeing your question – I don’t want people to be confused! Coconut cream is sometimes sold on it’s own (I’ve found it at Trader Joe’s and health food stores), but if you can’t find that, it is the top of an unshaken can of coconut milk, as you correctly assumed. You should be able to get 1 cup from 1 can of coconut milk, depending on the brand. Hope this helps!

  26. How far ahead of time do you think these could be made? For example, could they be made on a Wed night or Thurs morning and then enjoyed on a Friday around noon? Would they last in the fridge that long?

    • Hi Becca, they would last, but I’d say the fresher they are, the better because the longer the sit, the less crisp the tart crust will be. You can always make the tart crusts ahead of time and pop them in the freezer until a few hours before you’re ready to fill and serve them. The filling comes together quickly, so if you could make that and assemble them the same day as serving, the crust will stay crispy. Hope this helps, Becca!

  27. Should the coconut oil be in solid or liquid form? You specified ‘room temperature’ but that varies pending where you live and the season of the year. Currently, my room temperature coconut oil is in liquid form.

  28. I tried making these today and my cream would not settle. It was still very runny and ended up being like more of a glaze than a filling. Any advice?

    • Hi Mary – did you include any of the liquidy part that was in the can with the coconut cream? You need JUST the super thick cream for this recipe – anything else would make it too thin, like you mentioned. Sorry you had trouble!

      • These were awesome, thank you so much! I made them for a child’s birthday party where I knew we had a couple people coming with food allergies. I had both regular cookies with cream cheese frosting and these and even the kids without allergies devoured these as much as the regular cookies! Thank you for this recipe!
