Chocolate Date Caramel Tarts (Gluten Free, Vegan, Paleo)

Chocolate Caramel Date Tarts (Gluten-Free, Vegan, Paleo) from Bakerita.comBusy, busy, busy. I really don’t know how else to sum up my life right now.

Of course, I’m having the absolute time of my life, traveling to new and exotic cities every weekend, eating way too much delicious food (if there is such a thing), spending time with my best friends, and completely exhausting myself in the process. But hey, I’m only here for a limited amount of time, and I plan on making the most of it!

The side effect of my busy/exhausted life is far too few posts for you guys, and for that, I repeatedly apologize. I do hope you’re all enjoying my travel posts though! [Read more…]

5. Pecan Pie

Coming in at number 5 is one of my personal favorites – pecan pie! However, my version has browned butter, extra pecans, and no corn syrup, making it even more delicious than regular pecan pie! :) [Read more…]

Cake Batter Truffles

Most of you probably don’t know, but it’s my birthday! Today, September 16th, I’ll be 19 years old.

Sort of a boring year, nothing new and exciting happens at 19, but it is my last year before my 20s.

How is that possible?

Ferrero Rocher-Stuffed Chocolate Cupcakes with Nutella Buttercream

If you follow me on Instagram (Username: rachelconners), you’re probably familiar with these cupcakes. The picture of the batter going into the oven got a few “OMG”‘s and the final product got a couple “Wow”s and a declaration of love.

Yeah, they were good pictures, but these people haven’t tasted these cupcakes. I can vouch, these are “Wow” and “I’m in love” worthy cupcakes. Seriously. [Read more…]

Sticky Toffee Pudding

You know those meals that just blow your breath away they are so good? All the flavors are just so spot-on perfect that you're just in food heaven?

I've had a few of those meals, and they all stand out very definitively in my mind.

One in particular though, still has me drooling when I think about it.

When my dad and I we're on our road trip back in January, driving from San Diego to Tacoma, we made a few stops along the way.

Pepperoni Pizza Monkey Bread

Having high expectations can be tough. When you have high expectations, you want the best. I tend to set my expectations pretty high, and I always want things to turn out the best way that they can. So when things I do, or things that happen to me, or things that I make turn out way better than I ever could have hoped, I get pretty jazzed. These past couple of weeks, however, have managed to exceed a lot of expectations.

On Sunday, March 11th, my mom managed to score tickets to a private Katy Perry concert from my aunt. Two of my best friends, Nicole and Paige, and I all got to go and see the concert with about 150 other people. Uh, how cool is that?! Amazingly incredible. She was such a good performer. Her outfits, her hair, her singing, the atmosphere, everything exceeded any expectations I had. I even danced on stage with her. Let's get this clear: I danced on stage with Katy Perry. Sorry to brag, but it's one of my prouder moments. I went just being like “okay, this is cool. This is chill.” I left screaming “That was the most amazing thing in the whole entire world. OMG.” Because let's be real, doesn't a private Katy Perry concert break most people's Spring Break expectations?

Homemade Marshmallows

Homemade Marshmallows: once you try them, you'll never go back to store bought again! From Bakerita.comSometimes, things just happen. You can’t control them, try as you might. Life just takes control and you just need to let it run it’s course, leaving behind the lessons that it may. Happy things, sad things, falling in and out of love and lust, births, and deaths. It’s all part of the course, and we need to let things happen. I’ve been trying to just let things happen lately.

This past semester…well, you could say that I was a little stressed, but that’s an understatement. I kept it to myself, not really wanting to burden anyone with the mounds of stress I felt. What to do now, what to do this summer, what to do next year, what to do after college…you get it. We’ve all felt it. Those moments when it feels like every deadline is tomorrow and you need to have your life figured out in the next five minutes.

Gluten Free Oatmeal Pecan Cookies

Gluten Free Oatmeal Pecan Cookies

I’ve mentioned my sisters’ dietary guidelines before, but I’ve decided this year, I’m going to share more of the things I make for her on here. She has a rather severe stomach issue that makes it super painful for her to eat most things…sounds terrible, I know. However, she takes it in stride and looks at it as a way to eat healthier. Even though all of you may not be gluten-free, low-sugar, and low-dairy, this recipe (as well as the ones to come) is still absolutely delicious and (dare I say it?) makes cookies as good as “normal” cookies.
