Having high expectations can be tough. When you have high expectations, you want the best. I tend to set my expectations pretty high, and I always want things to turn out the best way that they can. So when things I do, or things that happen to me, or things that I make turn out way better than I ever could have hoped, I get pretty jazzed. These past couple of weeks, however, have managed to exceed a lot of expectations.

On Sunday, March 11th, my mom managed to score tickets to a private Katy Perry concert from my aunt. Two of my best friends, Nicole and Paige, and I all got to go and see the concert with about 150 other people. Uh, how cool is that?! Amazingly incredible. She was such a good performer. Her outfits, her hair, her singing, the atmosphere, everything exceeded any expectations I had. I even danced on stage with her. Let’s get this clear: I danced on stage with Katy Perry. Sorry to brag, but it’s one of my prouder moments. I went just being like “okay, this is cool. This is chill.” I left screaming “That was the most amazing thing in the whole entire world. OMG.” Because let’s be real, doesn’t a private Katy Perry concert break most people’s Spring Break expectations?

Life just takes control and you just need to let it run it’s course, leaving behind the lessons that it may. Happy things, sad things, falling in and out of love and lust, births, and deaths. It’s all part of the course, and we need to let things happen. I’ve been trying to just let things happen lately.

This past semester…well, you could say that I was a little stressed, but that’s an understatement. I kept it to myself, not really wanting to burden anyone with the mounds of stress I felt. What to do now, what to do this summer, what to do next year, what to do after college…you get it. We’ve all felt it. Those moments when it feels like every deadline is tomorrow and you need to have your life figured out in the next five minutes.

I’ve mentioned my sisters’ dietary guidelines before, but I’ve decided this year, I’m going to share more of the things I make for her on here. She has a rather severe stomach issue that makes it super painful for her to eat most things…sounds terrible, I know. However, she takes it in stride and looks at it as a way to eat healthier. Even though all of you may not be gluten-free, low-sugar, and low-dairy, this recipe (as well as the ones to come) is still absolutely delicious and (dare I say it?) makes cookies as good as “normal” cookies.

Can you believe another year has already passed? In some ways, it seems like 2011 was just beginning, but parts of 2011 seems decades ago. So many things have happened this year, and for most of them, I am infinitely grateful. This year I:

  • Graduated from high school
  • Decided where to go to college
  • Completed my first semester of college
  • Met a ton of amazing food bloggers from San Diego at the San Diego Food Blogger Bake Sale
  • Traveled to Bali, Switzerland, and Italy
  • Had an article written about me in the newspaper
  • Was on TV for the first time
  • Was a featured blogger on Yummly and BlogHer
  • And even got recognized by people for being Bakerita…so flattering!

Sometimes I have epiphanies. Often, these epiphanies involve food.

A lot of the time actually. Like, 99.998% of the time. The .002% percent that aren’t about food are typically about how I could shave my dog to get around the “no pets with fur” rule at my school, or some clever excuse as to why I don’t need to go to math. Quality thoughts running through my head. Betcha wish you had mind-reading skills now, dontcha?

Back to epiphanies about food though. This weekend I was feelin’ pumpkin. I bought a can at Whole Foods. For no good reason. Naturally, this sparked my creative juices and VOILA:
