Since I tried making my first galette earlier this year, this irresistible chocolate strawberry one, I’ve been having galettes on the mind rather often. A galette, if you’ve never had one before, is essentially a rustic version of a pie or tart. It has a similar flaky crust that’s rolled out, and it can have a fruity or savory filling, but instead of being placed in a pie dish or tart pan, the edges of the pastry dough are folded up and around the filling, forming a freeform kind-of pie.

I’ve had quite a few phenomenal monte cristos in my day. There’s something about the salty/savory combined with the sweet that draws me to the dish, and I’ve ordered it at many brunches – the sandwich at Milk in Barcelona is amazing, and Dirty Oscar’s Annex in Tacoma, Washington also makes a great one.

Traditionally, a monte cristo is a sandwich of ham, a good melting cheese (typically gruyere), and jam. The whole sandwich is then dipped in a french toast-like egg wash, and grilled to melt the cheese and griddle the bread. Sometimes, it gets a good sprinkle of powdered sugar as well. [Read more…]

Thankfully, I acquired some tan lines to prove it actually happened. We got so lucky with the weather, and every day in Kauai was warm and dry, which is rare for January.

We hiked to some of the most magnificent spots imaginable, ate fresh fruit and fish every day, and spent plenty of time exploring beaches, caves, and little side-of-the-road fruit stands. The waves were extraordinary – I had never seen waves quite like this. We’re talking giant thirty, forty foot swells crashing with wild abandon against the rocks, creating splashes like you couldn’t believe. [Read more…]
