I’ve been making these frozen caramel banana bars since last summer, when I first dreamt up this recipe. I’ve been testing it since, with different types of caramel and different versions of crust, trying to get it just right for you guys.

It had to happen this summer, because I can’t give you guys frozen treats when it’s cold out…though that would definitely make them easier to photograph. But these guys were meant for summer – they’re cool, creamy, and refreshing. Definitely the thing you want on a warm spring or summer day! [Read more…]

I’m not much one for candy bars anymore, but I used to be ALLL about them. I had many favorites – Twix and Reese’s were definitely at the top of the list, but Take 5 Bars had to be my ride-or-die favorite.

They combine all my favorite things about sweet + salty treats – salty pretzels, gooey caramel, smooth peanut butter, and crunchy peanuts, all coated in chocolate. Swooooon. All the goods! [Read more…]

These Chocolate Peanut Butter Caramel Cups are made with homemade chocolate surrounding a gooey vegan peanut butter caramel. These refined sugar free treats are the perfect way to get your candy fix!Last week, I headed into the kitchen to whip up another batch of homemade peanut butter cups after I realized my roommate Ally and I had demolished all of the two batches I had made when I first posted them a few weeks ago…oops. It was a situation that needed to be remedied STAT.

I got started, mixing up the super easy 3-ingredient homemade chocolate recipe that I know like the back of my hand, and pouring the bottom layer of chocolate into the lined mini muffin tins. I popped the tin into the freezer to let the chocolate layer set and as I grabbed the peanut butter, I decided to have a little fun with the it…why have plain peanut butter cups when I could have peanut butter caramel cups?!?  [Read more…]

These Dark Chocolate Macadamia Nut Magic Bars are a sweet & gooey dessert bar with a hint of tropical flair. You'll be hooked after one bite of the gooey vegan caramel and buttery macadamia nuts on a gluten-free coconut lime crust.Oooh boy, this has been a week FULL of chocolatey goodness! I had actually planned on sharing a different recipe today, but after I perfected these bars yesterday and had some people asking for the recipe on Snapchat (add me –> bakeritablog), I decided to just bite the bullet and share them now while my excitement over these beauties is still super fresh. As in, I may or may not be intermittently eating a bar as I write this, so my gushing over this treat is spot on.

These are inspired by one my all-time, like since I was a baby, favorites – magic cookie bars. Traditionally, magic cookie bars (also sometimes called Hello Dolly Bars, or Seven Layer Bars) have a graham cracker crust, sweetened condensed milk, walnuts, chocolate chips, butterscotch chips, and coconut. They are SO good and they’re always a staple during the holidays. [Read more…]

These Samoa Bars have a shortbread crust, a layer of toasted coconut caramel, and a dark chocolate drizzle! They're a gluten-free, Paleo, vegan, and guilt-free way to enjoy your favorite Girl Scout cookie. What are your favorite Girl Scout cookies? Mine have always been a strong tie between Thin Mints and Samoas (or Caramel DeLites to some of you). They’re so different that I could never pick a fave and always ended up with both – sometimes with a box of Tagalongs thrown in for good measure.

Samoas have always had one of my favorite ever flavor combinations, though. For someone who absolutely adores shortbread cookies, caramel, chocolate, and toasted coconut in most forms, putting them all together was a genius move. In fact, it was one that was long over due to be replicated in my kitchen. [Read more…]
