Thankfully, besides the shorter days, it still mostly feels like summer here in San Diego. We still have fresh berries at the farmers market and I was happily running around in shorts in today’s 78˚F sun. When this post goes out, I’ll probably be laying in the sun, basking in the 90 degree heat (not to brag or anything). As I write this though, I’m waiting for my delayed flight to Houston, where I’ll then connect to Liberia, Costa Rica.

I was supposed to meeting up with my sister and mom during the connection, but because of my delay, I’l be on different flight to Costa Rica now. I won’t land there for another twelve hours and I’m yearning to be in the warmth! ☀️☀️

This hearty bread is gluten-free and refined sugar free.Soo…I’m calling this Paleo Carrot Bread, because that’s what it is and it’s SEO friendly and decently descriptive, but I really wanted to call this Sunshine Bread. My sister actually came up with the idea for a carrot tumeric bread when she was helping me recipe brainstorm over the holidays, I wrote “sunshine bread!” with the description, and the idea has been stuck in my head ever since.

I was predicting it would turn out to be a beautiful golden color thanks to the tumeric, grated carrots, and golden raisins. However, the coconut sugar derailed my colors plans and the bread turned a more rusty orange color – not as “sunshine-y” and I had envisioned, and the name didn’t fit as well as I had planned. Also, sunshine bread is not descriptive at all.

It was quintessential perfect fall outside, with the leaves changing into rainbows on their branches, a crisp blue sky and a chilly bite in the air.

At the farmer’s market, pumpkins were everywhere with piles of apples on all of the tables in every variety you can imagine. There were apple ciders, pear ciders, and flavored versions of them both. It was buzzing with the warmth and comfort of fall – my favorite thing about the season.
