It's baked in a skillet and served with whipped cinnamon honey butter.Hi, I’m back with more cornbread goodness. I know, if you follow the happenings around here, I brought you these green chile corn muffins not too long ago, and here I am with another cornbread recipe for you.

But this one is so different from those…I couldn’t help sharing both recipes. Where those muffins are totally delicious, they’re also definitely savory: they get their flavor from green chiles, cheddar cheese, and creamed corn. Yum for sure, but sometimes you want cornbread with a sweet edge. Sweet sticks were one of the staples of a night out in college. At my school, there was a pizza place on campus that would stay open until 2 a.m. on the weekends, but they would stop taking pizza orders an hour before closing. [Read more…]

They're ready in 45 minutes and perfect as a quick breakfast or snack.Yesterday, my roommate and I woke up decently early, feeling refreshed, and decided to head to the farmer’s market. It was quintessential perfect fall outside, with the leaves changing into rainbows on their branches, a crisp blue sky and a chilly bite in the air.

At the farmer’s market, pumpkins were everywhere with piles of apples on all of the tables in every variety you can imagine. There were apple ciders, pear ciders, and flavored versions of them both. It was buzzing with the warmth and comfort of fall – my favorite thing about the season.

The first few hours feel just like 21 felt, but I’ll keep you updated.

To be honest, I’ve never been the biggest fan of my birthday. Being the center of attention is definitely not my favorite thing, and my birthday is usually a day I try to sweep under the rug as stealthily as possible.

As all the kiddos head back to class, and I’m in my apartment, not starting classes for the first time in 16 years, I had to make a treat to help me reminisce on the most iconic of school lunches of years past: PB&J! This nostalgic-inspired treat is one of my favorite twists on cinnamon rolls. Just let them rise overnight, pop them in the oven first thing in the morning, and you’ll have the scent of warm, gooey cinnamon rolls in place of an alarm clock.

Put a slice in the toaster for a delicious snack. When I was a kid, I claimed my stomach had three compartments: one for bread, one for dessert, and one for the rest of the foods. Naturally, the bread and dessert compartments were the biggest.

As I’ve gotten older and pretty adept at creating tons of goodies to fill my two favorite compartments, certain things I make tempt me way more than others. As much as I bake sweet treats, my sweet tooth has gotten a lot smaller since I’m constantly surrounded by desserts. Usually, a bite of a brownie or cookie is enough to satisfy my sweet tooth. newwPaleo Zucchini Bread

So, I haven’t said it “out loud” on here yet…but as I have mentioned a few times on Bakerita already, I just graduated from college. I moved to Seattle…and I’m purposefully not looking for a job. As I struggled to figure out what I wanted to do with my life, I was presented with a couple of opportunities that inspired me to choose the less conventional path: working on Bakerita.

It’s sort of hard and scary to be intentionally not trying to find a job after graduating from college, but the temptation and draw of working for myself and doing what I love is inspiring me to take a risk, while I can. I’m beyond grateful to have family, friends, and you – my readers – to support me, because without anyone reading Bakerita, there’s no way I could do what I do. [Read more…]

These are the perfect snack or soup accompaniment.I’m not a procrastinator. Okay, that’s not true – I procrastinate a little bit, as does everyone, but generally, I’m definitely the kind of girl who gets it done ahead of time. Yet, somehow, I’m sitting here at 8:08 AM, writing a post that was supposed to have gone out at 8. Behind this on my desk top is a cover letter I’m in the middle of writing, a (thankfully) finished case analysis for class today, and a five page draft of a memoir that’s due in one hour and is definitely supposed to be seven pages.

Normally, I would be majorly beating myself about it, filled with anxiety about the standards I’m not meeting. In reality, the “standards” are just really ones I’ve set for myself – and I do think that it is important to set high standards for yourself. For me at least, that’s how I get places. Set a goal, reach it, set another. I’m the same way with my tasks everyday. Sometimes though, like this week, things are just a little too hectic and filled for me to get my hands on everything that needs to get done. Things slip through, panic ensues, and I always get it done before the world comes crashing down. [Read more…]
