I’m sure most college students would agree that granola bars are an absolute lifesaver. I know that when I’m in a rush, they become my meal. I have a variety of Lara Bars, Clif Bars, and Kind Bars in my desk right now for that very reason. However, why are those little bars so darn expensive?! I feel like I spend so much money on them, and I’m sure so many other students feel the same way. Solution? Make them myself!

I decided to replicate the ever-popular Chewy Bar, healthed-up a bit to resemble a granola bar more than a candy bar. While these yummy treats still have sugar and chocolate chips…most of the sugar has been replaced by honey, and I can almost guarantee they still have less sugar than whatever granola bars you’ve been noshing on.

Apparently I don’t eat as much as I thought. At the beginning of the year, my mom bought me the medium meal plan, talking about how “we can always buy more if we need too!” That was entirely unnecessary. Starting off the year with $580 Dining Dollars, I was left with $296 last Thursday. What?

Since my school only lets us transfer $25 over to next semester, I headed over to The Cellar, the school’s quasi-grocery store and stocked up on everything I could find. Among the massive amounts of food I bought was a ton, and I mean a ton, of candy. Currently sitting on my shelf is a box with at least 50 different candies in it. Too much? Not for me. Obviously, all that candy will find its way into baked goods.

I’ve seen these marshmallow-cookie things on many-a sites. Oreos, Nutter-Butters, so many different kinds! I knew, right when I saw the concept, I wanted to try it with chocolate chip cookies. I cut the butter a bit (for no particular reason) and used giant marshmallows, and they turned out heavenly. I definitely have a list of cookies I want to try using this method. It’s so easy, and the results are heavenly. AND! They are no-bake, using only a microwave. Perfect, huh?

As most of you know, I’m living in a dorm this year.

If you’ve lived in a dorm at any point in your life, you’ll understand my struggles with trying to bake in a dorm kitchen. Its smelly, its gross, no one cleans up after themselves, and the appliances should have been replaced long ago. No ideal for someone who loves to bake.

Because of this, I’ve been creative in avoiding the oven and kitchen all together and I’ve taken to doing something I never would have imagined myself doing – using the microwave to bake. Whaaat? I know. Stay with me here.

Top14of2014We’re onto the final couple days of 2014, and I’m still reeling that this year’s already almost at it’s end. This time last year, I was getting off the plane in London, starting my semester abroad. The first six months of my 2014 were spent traveling to over 12 different countries, and even more cities, all over Europe, with a brief stint in Africa. I couldn’t have asked for a more incredible, insightful, exciting, stimulating semester. My time spent abroad was unlike any other time in my life, and I wouldn’t trade it for anything.

The second half of my year was spent back in Washington, completing the first semester of my last year in school. It’s surreal that I only have one semester left of college. Well really, of school. Ever. In my whole life. [Read more…]
