Actually, this happens a lot. Usually, it’s fine and I can save some/all of what I made until the next day so I can take pictures of things to share with you all before I let my family and friends pounce on it. However, when we’re having a family get together, forget about it. I like to serve things fresh so the cookies and cakes and pies are usually coming out of the oven as people start to arrive. Things get eaten before I can even attempt to step back and snap a shot. Usually, it’s not too big of a deal. Either I remake it again to share with you if it was that good, or it just never gets posted if it wasn’t incredible (oops). Occasionally, if I’m lucky, I can hide a few to photograph the next day. That’s a rare occurrence.

Since it was Hannukah this past week, we had a family get together. I made two delicious dessert, a butterscotch pudding covered in salted caramel and topped with lightly sweetened whipped cream, as well as this honey-sweetened apple cranberry crumble. Both desserts were claimed as some of the best I’ve ever made…yet they were both just done as it was getting dark, leaving terrible lighting and no chance of me getting pictures.

As I stood around the kitchen island with my aunts and my sister eating cranberry apple crumble listening to all of us moan in joy at the deliciousness, I thought “screw it. This needs to be shared.” I grabbed my camera, snapped some subpar photos, and hoped that my praise of this recipe will inspire your trust in me, rather than beautiful photos compelling you to make it.

It really is a fabulous. It’s tart from the cranberries and Granny Smith apples, with just a hint of natural sweetness from the honey and raw sugar, a sprinkle of cinnamon adding a touch of spice and wonderfully crunchy topping to round it off. Grab that last bag of cranberries and serve this to your family, watching the plates be forgone to scoop it right out of the pan and into the hungry mouths of your family and friends.

Cranberry Apple Honey Crumble

For the filling

  • 5 small-medium sized Granny Smith apples, peeled, cored and sliced thin
  • 1 12 oz. bag of cranberries
  • ½ cup honey
  • 1 tablespoon cinnamon

For the topping

  • 1 ½ cups old-fashioned oats
  • 1 cup whole wheat pastry flour
  • ½ cup all-purpose flour
  • 1 cup natural turbinado sugar
  • 1 teaspoon cinnamon
  • ¾ cup walnuts, chopped and lightly toasted
  • 10 tablespoons butter, slightly softened

Instructions

  1. Preheat oven to 350*F. Combine honey and cranberries in a large saucepan over medium heat. Cook for 2-4 minutes or until cranberries are slightly softened and honey is warm. Gently stir in apples and cinnamon until everything is evenly coated. Cook for another 5 minutes or until apples have warmed up. Pour mixture into a 13″x9″ pan and spread evenly. Set aside.
  2. In a food processor or a bowl with a pastry cutter, combine first 6 ingredients and pulse or stir until combined. Add in butter and pulse into the butter is incorporated and the mixture is crumbly. Sprinkle evenly over the top of the apples and cranberries. Bake for 40-50 minutes or until top is browned. Serve with ice cream, whipped cream, or alone. Enjoy!
